This is a very easy pistachio cake recipe with relatively simple ingredients that create a real wow factor.
- This easy pistachio cake recipe has a subtle sweetness that makes it the perfect dessert. Follow these step-by-step instructions to make this impressive treat!
- Preheat the oven to 350°F. Grease a cake pan and sprinkle with flour. Set aside.
- In a food processor, pulse the pistachios until they are broken down into fine pieces. The smaller, the better!
- In a large bowl, stir together the pistachios and flour. Add the baking powder, soda, and salt; mix until combined.
- In a stand mixer fitted with the whisk attachment, combine the butter and oil and beat until homogenous. Add the granulated sugar and beat until light and fluffy, and pale in color. Add the egg and egg white, vanilla extract, and almond nuts extract. Beat on medium-high until light and fluffy—about 2 minutes.
- Add the sour cream and milk to the flour mixture until blended.
- Last, fold the dry ingredients into the wet until combined and no streaks of flour remain.
- Divide the batter evenly between the prepared pans and bake for 20 to 25 minutes, or until a knife inserted into the middle comes out mostly clean. Allow cooling completely before removing from pan.
- While the cakes are cooling, make the cream cheese frosting. In a stand mixer with a paddle attachment, cream the butter and cream cheese until light and fluffy, about 2 minutes. Add in the vanilla extract, salt, honey, and powdered sugar and whip to combine, about 1 minute more.
